Sole Fish Piccata

Very easy and quick recipe. This recipe is fine with almost any kind of fish fillets.

Ingredients:

1 pound skinless sole fish fillets
1 teaspoon ground black pepper
1 teaspoon salt
3 tablespoons olive oil
1/3 cup flour
3 tablespoons lemon juice
½ cup white wine
1/3 cup chopped parsley
¼ cup capers
3 tablespoons butter

Method

Rinse the fish under cold water and then pat dry.
In a bowl combine the flour with a little bit of salt and pepper. Dredge the sole fish fillets in the flour to lightly coat.
In a frying pan heat the 3 tablespoons olive oil over medium high heat.  Add the fish and cook for about 2 minutes each side until golden. Place the sole fish fillets in a plate and set aside (you can cover with foil to keep warm).
Add the white wine to the pan and scrape any browned bits. Bring to a boil for about 1 minute to reduce the wine. Then add the capers and the lemon juice and boil for another minute.
Remove from the heat and add the butter swirling it constantly. Stir in the parsley and pour the sauce over the sole fish fillets.
